The Side Project Cellar 7-Year Anniversary Celebration

The Side Project Cellar opened its doors November 11, 2014. We were a pretty small but mighty staff of five people then, including Cory & me. Seven years later, I just hired our 25th employee. We’ve also grown from this first location to now approaching three locations! We have a lot to celebrate!
Some of you may know that I was a brewery sales rep back in the day. I started working for Goose Island in early 2010. Back in the good ol’ days, Goose Island Bourbon County Stout was one of the first beers that Cory and I really just fell head over heels over! Well on a recent inventory of our keg cooler, we discovered I’ve been hoarding BCS kegs. We have a keg from the year we opened – BCS 2014! I’ve decided it’s time to tap some of these old BA Stout beauties! All of these kegs have been kept in cold storage in our draft cooler since the day we received them from the distributor. Look for an exciting Draft BCS Vertical in our Anniversary Week schedule below…
On that same note, I’ve also discovered I’ve been hoarding Lambic bottles. Every time we had the opportunity to purchase Drie Fonteinen and Cantillon over the last 7 years, we took it! We’re going to start putting these amazing vintage Lambic bottles on our on-site enjoyment list starting with our Lambic Day during Anniversary Week. Look for 3F Framboos 2014 and Cantillon Fou Foune 2015 to name a couple! All of our Lambic have been stored in our 58-degree, UV ray-blocked beer cellar since the day we received them from the distributor. Most bottles are still on their side in the original box on the highest shelf.
It’s been a wild 7 years, but we have a lot to be thankful for. We are grateful for all the support from our customers, friends and family. Thank you for letting us build a place where Cory could showcase his blending talents with our original “white label” beers and our personal favorites like Grisette and Saison du Fermier. Today, our Draft list has grown with so much more Side Project and Shared beers! Enjoying a Shared Hops for Karen draft on our new Cellar patio is now my new favorite thing!
We are also so appreciative of our staff. Our work family is so darn talented and we are so lucky to have every single person on the Side Project Team! We will also be pouring more delicious beers from Side Project and Shared indoors and outdoors. You might just see Cory walking around with a Magnum.
The Side Project Cellar will be open special hours 12pm to 6pm on Saturday, Nov. 13th. (Our Brewery Tasting Room will be open regular hours 1-8pm on Saturday, Nov. 13th.)

Sample Trample!
In addition to offering any Leftover Beers from the week, we wanted to take the opportunity to highlight some of The Side Project Cellar’s other delicious offerings that don’t often get the spotlight as much as the beer! Our Co-Managers Roilen and Laura have been doing a great job curating our wine and whiskey list too. On Sunday, you’ll be able to visit us 1-8pm and partake in “Sample Trample” by ordering any of the set samples for the day:
