Parfait

Last year, while both of our tasting rooms were closed and our focus was only on production and our curbside operation, we were afforded the opportunity to experiment a little more with our "clean" Barrel-Aged Beers. Beers like For Gabe - our Barrel-Aged Barleywine and Barrel-Aged Stout blend - and Black is Beautiful - a blend of our Vibes recipe with some Side Project Barrel-Aged Stout and a dash of Vanilla Beans - came into existence and expanded our desire to creatively continue to blend new beers and express our barrel program in new lights.
Furthermore, we have been looking at ways to use new, all natural and tangible, ingredients in some of our stouts. While we could brew up our Vibes recipe and continue experimenting with stainless-tank only versions, our barrel program is now so strong and so deep, by just blending in some Barrel-Aged Stout we can truly elevate and showcase what Side Project and Shared have worked for years to accomplish in the huge, malty, spirits barrel-aged beer realm.
So, we would like to introduce Parfait (Vanilla Bean, Cocoa Nib, Missouri Walnut)! Parfait will lay the ground work for a small line of beers focusing on experimenting with new adjunct combinations in a blend of Shared Vibes base with Side Project Barrel-Aged Stouts.
For this first release, we looked to an idea Rich had contributed to our idea board in the brewery (yeah, we started writing down ideas on a board in the brewery last year - some are serious, most are crazy!) which included using Vanilla Beans (Mexican, Madagascar, Ugandan), Cocoa Nibs from Ghana and Missouri Walnuts! These ingredients were steeped in a beer which consisted of Shared Vibes and Side Project Barrel-Aged Stout aged for 30 months in Willett Bourbon barrels with Ugandan Vanilla Beans in the barrel. The result is Parfait (Vanilla Bean, Cocoa Nib, Missouri Walnut).
We are already thinking about the next release of this beer - Horchata inspired? - but until then, we hope that you enjoy this foray into a new line of beers from us!
These cans will be sold as a SINGLE can on Wednesday morning at 10am CST and pickup can begin as soon as Wednesday evening during our curbside operation. There will be no limit on the number of cans one can purchase. A reminder that your online orders can still be only picked up at The Brewery location during curbside hours (proxies are allowed). We will also be tapping kegs of this beer starting Wednesday evening at The Cellar (yes! The Cellar is open again!!) for your on-site enjoyment. In conjunction with this beer, we plan on also releasing cans of our first, soft "West-Coasty" IPA call Emerald Cuts!
We thank you for your continued support of our tiny niche brewery, especially as we once again pivot and adjust to a partial re-opening and new way of once again sharing our beers with you.
Cheers and many Thanks from the entire Side Project Team!
